May has been one of those months that perfectly captures what I love most about this little cookie business: celebrating life’s sweetest moments, getting creative with new themes, and spending time teaching people how to decorate cookies themselves. Between custom orders, classes, and graduation season kicking into full swing, the kitchen has definitely been busy lately!

This spring brought such a fun mix of themes and celebrations, and I wanted to share a few recent favorites.
A Sweet Christening Set for Baby Ruby
There’s something so timeless and elegant about soft neutral cookie sets. This beautiful christening collection featured delicate florals, a tiny dress, and a sweet little dove personalized for baby Ruby. These are the kinds of orders that feel extra special to create because they become part of such meaningful family celebrations.
One Sweet Cookie” Birthday Theme
This adorable “One Sweet Cookie” first birthday theme for little Amir was packed with playful details like milk cartons, chocolate chip cookies, and custom birthday plaques. First birthdays are always some of my favorites because parents go all out for the memories (and honestly, the photos are usually adorable too!).
A Masters Golf Birthday for a Little Guy Turning One
Golf themes are having such a moment right now, and this Masters-inspired set was SO fun to make. From golf carts to tiny plaid details and little putting greens, this set felt classic, playful, and perfect for spring.
Purple Bowling Birthday Fun
This set for a six year old’s purple bowling birthday party may have been one of the most unique themes I’ve done recently! I loved the lavender bowling balls, gingham details, and retro bowling vibes. It was playful, girly, and different in the best way.
Cookie Classes Update 🎨🍪
Since my last blog update, I’ve taught 5 new public cookie decorating classes and 4 private classes — which is honestly kind of wild when I stop and think about it! I’m so incredibly grateful to everyone who has come out to decorate cookies with me over the last few years.
Sadly, I do need to put my public classes on hold for a little while as I search for a new home for classes. Stonehill College has been an absolutely wonderful space for me, and I’ll always be thankful for the support and memories there, but it’s time for a new chapter.
If you happen to know of a great local space that might work for cookie classes I would LOVE suggestions and leads. Please feel free to reach out!
That said… not having a permanent space has definitely not stopped me from dreaming up new class ideas 👀
One of my favorite new concepts is this adorable brunch-inspired cookie class featuring strawberries, croissants, coffee, avocado toast, and mimosas. Honestly? I’m kind of obsessed with it.
And if I can’t find the right local venue soon, I may start experimenting with an online learning format for classes instead! Graduation Season + Father’s Day Ahead

Graduation season is officially here, which always makes May and June extra busy around Sunshine Day Bakery. Between high school graduations, college celebrations, and end-of-year events, custom orders tend to fill up quickly this time of year.
But don’t worry — I haven’t forgotten the awesome dads out there! Keep an eye on my social media and website because I’ll be releasing some fun Father’s Day cookie sets soon. I already have a few ideas brewing that are equal parts sweet, funny, and perfect for celebrating dad.
